0 Batteries never seem to last

Ok well i can never keep batteries in my camera between the kids and rob stealing them for the xbox and all the pictures i take they just don't last so i really haven't been a slacker im just not able to photograph anything. So i guess i will just have to tell you about all the great stuff that's been going on lately.

I made some really cute basic skirts for my daughter. I love doing the really twirly layered boutique skirts but its also nice to do the basic ones cause i can get a bunch made in half the time and with her summer wardrobe suffering she needed them.
The newest one is made from Robert Kaufman "Animal Party"fabrics.

She loves twirl skirts and dresses.
I also made a super cute dress for a friend of mines daughter and i love how it came out the colors are great for summer.

As for dinners and things well we did nachos again because my son loves anything mexican and we have also been doing bbq and anything we can on the grill. Its just way to hot here is st.louis but you know give it a minute it will change. Our weather is so un-predictable i don't know if i should jump in the poll or get the rain boots out.

Well that's all i have right now i have to get back to work. Being a mom is one job that never ends.

0 Mini Sliders & Homemade Fries

On the Menu: mini cheeseburger sliders & home made fries

Rob loves cheeseburgers more than any person should so on the occasion i want to be nice we have burgers. My idea of a burger is a steak n shake paper thin piece of meat but he loves a super monster thick burger. eww thats just to much beef for me. So anyway on topic i decided to make mini burgers since the kids will eat anything small and cute. I mix up my extra lean ground beef (2 pounds) with 4tbl ketchup, 2tbl mustard and finely diced onion. spread it out in a foil lined cookie sheet bake for about 30-35 min or till done. (i like it well done)
The last few minutes or so i top with more diced onions and slices of american cheese. when its done cut in squares and make your mini slider with what ever toppings you like. Im fond of pickles. You can use hot dog buns cut in thirds or small rolls or buns its all up to you.

On the side we have homemade fries. Nothing to special about them other than you can mix them up a bit with seasoning for whatever your mood. I wanted to make some cheesy ranch potato salad but as im short on time that will wait for another day.

For dessert tonight we have strawberry shortcake. You wont find no overly sweet or cardboard tasting generic shortcake here mine is of course made fresh :)

All in all its a great quick dinner and really affordable. For the cost of 2 cheese burgers out i have a whole pan and fries and dessert. With this economy its always nice to stretch the budget. And with the money we saved i can buy more shoes. lol....

0 Num Num Nachos

On The Menu: Over the top nachos

Cripsy totilla chips layered a mile high with seasoned beef, melty cheese, chunky salsa, diced tomatoe, refried beans with jalapenos, and sour cream. My mouth is watering just thinking about them. oh course i give myself a extra dose of warm yummy cheesey goodness.

My nachos are a meal in themself but you could serve them with some mexian rice or some cilantro lime rice or some kinda salad but really these are enough for me.

*Tip - you can bake your chips in the oven for about 6 min to make them even better and more crisp like you would get at a resturant.

0 Happy Mother's Day

Its that time a year again where the kids are supposed to be good and make you love being a mom. Unfortunately that's not always the case in my household, we have the duct tape on stand by 24/7.

Today started off with little foot steps creaking around my room as mommy tried to sleep in. When i awoke to my surprise was fresh cut flowers, handmade cards and cute handmade picture frames.
Once i get my behind up out of bed and splash some water on my saggy dark circles i waddle my way into the kitchen looking like something from a horror story. But there it is to my surprise my boyfriend making breakfast. I scarfed down my grub before i could get to many pictures but here is a sample.

On the Menu: Biscuits & gravy (my fav) and pancakes (his fav)

0 Experimental Veggie Stuffed Chicken & more cupcakes

On the Menu: Veggie stuffed chicken, steamed squash, ??? and more cupcakes :)

There are lots of stuffed chicken recipes out there but i like to experiment on my own a lot. In tonight's dish i am stuffing the chicken with mushrooms, squash, and 3cheese garlic and herb cheese. Then coating it it a spice and bread crumb blend. The steaming the remaining squash for a side and serving with???

I was in the mood for more cupcakes who doesn't love the sweet little chunks of ecstasy. lol
So this time im doing a yummy butter recipe yellow cake with a chocolate buttercream frosting. mmmm butter and frosting. drool....

0 Trusty spaghetti, zuchinni & spicey garlic bread knots

When short on time spaghetti is our go to meal. It fast easy and can be made a million different ways.

On The Menu: spaghetti, fried zuchinni & spicey garlic bread knots

This post is more for just showing pics and keeping me in the swing of things i mean we all know how to cook pasta and throw in some sauce so nothing to special. fried zuchinni is a must around our house with pasta. I do a mix of italian bread crumb, garlic salt, and parmisain romano cheese. The bread knots are canned refferigerated bread sticks cut in half and tied in knots. bake as normal then toss them in a bag with garlic, parmisan cheese, red pepper flake, parsley and a little olive oil. Delish...

0 Burrito Night...

Ok well i had some ground beef to use. Don't we all. So i decided to make burritos. The burritos are super easy but to pack more flavor im using cheddar jalapeno pepper tortillas and adding cilantro lime rice to the filler.

On the Menu: Cheddar Jalapeno Burritos & Cilantro-Lime Rice

Cilantro-Lime Rice

This was great when used in my burritos. Could have been a little more flavorful so next time i will add more chicken bullion to the water but over all very good with a hint of lime. i suggest not using regular minute rice as it gets to sticky (unless you like that) but get a good long grain rice.

Cheddar Jalapeno Burritos

This was one of the best burritos i have made at home or eatten elsewhere. It reminds me of qudoba. The cheddar jalapeno tortillas gave them a great flavor inside and out. The meat mixture is a combo of ground beef, black beans, cummin, chilli powder, garlic, onion & chunky salsa. This is then paired with shredded cheese and the cilantro lime rice. Yummy

0 Japanese themed dinner..

Tonight im going with a japanese theme for dinner as its one of my boyfriends favorite cuisine.

On the menu: chicken katsu, japanese zucchini & onions, and gyoza

*(if you should like to have the recipes just let me know and i can send or post them)*

GyozaThese are yummy like dumplings or also known as pot stickers. they can be fried or steamed or both i choose to fry them only as they don't take as long and aren't soggy or slimy. lol

My recipe for them includes, green onion, garlic, ginger, water chestnuts, soy or shoyu, sesame seeds and ground meat (traditionally pork but i used ground turkey). These are absolutely delicious and don't last long around here. I serve them with a slightly sweet dipping sauce of stock, soy, mirin and sugar. yummy.

Japanese Zuchinni & Onions

This is a wonderful traditional side dish and has awesome flavor. its a 2:1 mix of teryaki and soy, along with the sesame oil and toasted sesame seeds it was a hit for dinner.

Chicken KatsuThis is basically a fried chicken coated in panko bread crumbs. The crumbs give this chicken a delightful crunch that you just cant skip out on. the only thing i recommend is to season your chicken a little heavy as it may be to bland after cooking.

Red Velvet Jumbo Cupcakes with Whipped Cream Cheese Icing

Need i say anything about this other than OMG pure heaven. The icing is so light and fluffy and not to sweet you would want to just eat the whole bowl. However i advise against that im sure it will go straight to your hips. Although that could help some of the hip challenged ladies out there. lol

So this sums up dinner for us and my 9 year old says it was just unspeakable. haha I just say as long as they eat its a sucess.

0 Adventures in cooking...maybe?

Ok so here is the deal. I never seem to have the time to blog nor do i know what to say so im going to jump on the cooking blog band wagon so to say. Cooking is one of my passions i love food and i love when people love my food. Imagine that. lol

So along with all my other ramblings and such i am now gonna try to remember to blog about food. At least this way i will have more to say and of course tempt you all with some great recipes and mouth drooling photos. I know aren't i nice :)
