Yummy potato bites... Recipe

Here is the much requested potato bite recipe you all saw me post of facebook. Again i don't really measure but this is a good starting point.Hope you all enjoy...

Potato Bites

4 oz  fresh Parmersan cheese, grated, divided

1 1/4 cups instant mashed potato flakes
2/3 cup hot water
2 tbsp melted butter
1 egg, beaten
1/2 tsp salt, divided
1/2 tsp coarsely ground black pepper, divided
1  zucchini
1/2 cup sun-dried tomatoes in oil, drained and patted dry
3 tbsp mayonnaise
2+ garlic cloves to taste

1. Preheat oven to 425°F. Spray mini muffin cups with nonstick cooking spray. Combine potato flakes and water in bowl; mix well. Add half of the cheese, butter, egg and 1/4 tsp each of the salt and black pepper; mix until well blended. Divide potato mixture evenly among cups of pan. Press tops of potato mixture to make indentations; bake 12–14 minutes or until edges of cups are golden brown.

2. Meanwhile, for filling, chop zucchini & tomatoes Combine zucchini, tomatoes, mayonnaise, garlic and remaining cheese, salt and black pepper in clean bowl; mix well.

3. Remove pan from oven. Divide filling evenly among cups. Bake 5–7 minutes or until cheese is melted and edges of cups are deep golden brown.

Yield: 24 appetizers

I served this up with some confetti salad and pulled BBQ chicken sandwiches.
