Easy Peasy Cheesy Broccoli Soup

This is by far the BEST cheddar broccoli soup out there. Its even better than the restaurant variety out there. OMG good to the last drop and reheats fabulously.

1/2 cup onion, chopped
1/2 cup diced carrot
2 tablespoons butter
1 can cream of chicken soup
2 1/2 cups milk
1 lb Velveeta cheese, cubed
1 (10 ounce) package frozen chopped broccoli
Garlic powder to taste 

Sauté onion and carrot in butter til tender.
Add remaining ingredients to pot.
Add in the onion/carrot mixture.
Bring to boil then shimmer for 10 min. stirring frequently. Serve
Note this will thicken as it sits so if you reheat it just add a little more milk.

You can easily make this in a crock pot just combine all ingredients on low in crockpot for 3-4 hours.
